This Mexican dish comes from the state of Jalisco. Beef Shank meat slowly cooked in adobe made of Guajillo, Ancho, Morita and aromatic herbs. Traditionally this is served soup-style, but we’ve been asked to serve it taco-style. The shredded meat is put into a corn tortilla with cheese and fried in the sauce, then sprinkled with onions and cilantro and served with a side of caldo for dipping.
